Marscapone Mix

Filling for pastry cups for the canape dish Marscapone and red onion tartlet

Ingredients
  

  • 550 grams Cream Cheese
  • 1 ea Egg
  • 1 tsp Salt
  • .75 tsp New York cut pepper
  • 100 grams Waffle dry mix `(see waffle mix recipe)
  • 600 ml Cream

Instructions
 

  • Place cream cheese and egg into food processor, mix thoroughly until smooth. Stop and scrape side down with spatula at regular intervals
  • Add salt, pepper and waffle mix. Combine in processor.
  • Drizzle in cream with machine running. Keep mixing until mixture is thick enough to pipe into tartlet cases.
  • Place into labeled piping bag ready for service. Keep refridgerated.
