Weigh up all ingredients - all flours in one container - all grains and grain mix in one container - yeast, salt, sugar together - oil separately
Add yeast, salt, sugar to the mixing bowl (use large mixer for doughs over 14kg in size), then pour water over to dissolve. Add grain mix and leave to stand for 25 mins
Add flours and mix on low for 4 minutes and allow to stand for a further 20 mins
Add pressure to wheel and mix a further 4 mins on slow
tighten wheel mix on high speed for 4 minutes then check consistency and add wholemeal flour if too wet only 500gmn max
Mix another 4 mins on high
Raise until doubled in size then turn out, portion and form
