Eton Mess - single serve
A delightful mess of meringue, fresh whipped cream & mixed berries

- 1 each Meringue nest large
- 50 ml Whipping Cream
- 50 grams Frozen mixed berries
- 50 grams Fresh berries
- 20 ml berry coulis
- 5 each mint leaves clean and picked
Put frozen berries to one side and defrost. (best started day before and placed in the fridge to defrost)
Roughly crush meringues by hand and put to one side
Whip cream to soft peak consistency and place in a large bowl
Add meringues, frozen berries, fresh berries (trim and cut in half if strawberries) to the cream.
Using a large catering spoon turn mixture lightly to distribute ingredients, but don't over mix. Less is more
Turn into a large serving bowl or 2 and garnish with coulis and then rip the mint leaves apart and finish
