mussels meat
seconds if available

Gluten free baking mix

each
pinch of salt, pepper & curry powder
Topping
1
tsp
minced garlic

cups
mayonaise
hellmans or similar

sage leaves large
destalk and finely chop
Instructions
At kitchen
de-beard and de-tounge the mussels, then finely chop
Add eggs and gf mix then label and pack in fridge
Mix all ingredients for topping together and put into a piping bag. label/pack
On site
Cook small fritter around the size of a $2 coin. Make this by piling on top and cook till golden on both sides.
Serve with a small dob of topping as garnish
