Whitebait fritters

Servings 100 Individual Frittrs
- 1 kg whitebait
- 4 each eggs
- .5 tsp Salt
- .5 tsp white pepper
- .1 kg Gluten free baking mix
- 3 each lemons Cleaned and cut to half wedge size
Whisk eggs, salt, pepper and GF baking mix together in a bowl
Add whitebait and fold through gently.
Cook in a fry pan or on a (Clean!) solid top bbq. portion is approx 1 heaped teaspoon per fritter.
Placfe on a paper towel tro remove excess fat and serve as quick as poss with fresh cut lemon.
