Base
Line a half gastro (full if doubled) with baking paper
Smash biscuit into a medium crumb. Melt butter and mix thoroughly through biscuits.
Line the bottom of the gastro with the mixture in an even layer
Filling
In a stand mixer beatnik softened. the cream cheese u
Beat in condensed milk a little at a time.
Beat in the lemon and vanilla
Add the mixture to the gator in an even layer. Leave in fridge to set
Topping
Place the apricots and the liquid into a small pot with the lemon (zest only) and sugar.
Simmer for 10 minutes or until soft and then puree until smooth.
Add lemon juice to taste (on the tart side of life)
Cool 90% before applying to the top of the cheese cake and refrigerate before serving.
