Stert to cook potatoes in salted boiling water up to 1.5 hours prior to service. Once cooked place into plastic bowl and wrap with cling film to hold heat.
15 mins prior to service bring water to boil and blanch peas. Once cooked add to potato
Top with the cut butter and recover till service
When served add fresh chiffonade of mint, season with salt and pepper and toss in the bowl to mix elements together. Its ok for the potatoes to break up a bit, not completely smashed through.
