Mussels Fritters with a sage and garlic topping
Approx 1.5-2 per person depending on crowd
Ingredients
Fritters
- 1 kg mussels meat seconds if available
- 5 each eggs
- 5 Tbsp Gluten free baking mix
- 1 each pinch of salt, pepper & curry powder
Topping
- 1 tsp minced garlic
- .5 cups mayonaise hellmans or similar
- 6 each sage leaves large destalk and finely chop
Instructions
At kitchen
- de-beard and de-tounge the mussels, then finely chop
- Add eggs and gf mix then label and pack in fridge
- Mix all ingredients for topping together and put into a piping bag. label/pack
On site
- Cook small fritter around the size of a $2 coin. Make this by piling on top and cook till golden on both sides.
- Serve with a small dob of topping as garnish
