Eton Mess - single serve

A delightful mess of meringue, fresh whipped cream & mixed berries

Ingredients
  

  • 1 each Meringue nest large
  • 50 ml Whipping Cream
  • 50 grams Frozen mixed berries
  • 50 grams Fresh berries
  • 20 ml berry coulis
  • 5 each mint leaves clean and picked

Instructions
 

  • Put frozen berries to one side and defrost. (best started day before and placed in the fridge to defrost)
  • Roughly crush meringues by hand and put to one side
  • Whip cream to soft peak consistency and place in a large bowl
  • Add meringues, frozen berries, fresh berries (trim and cut in half if strawberries) to the cream.
  • Using a large catering spoon turn mixture lightly to distribute ingredients, but don't over mix. Less is more
  • Turn into a large serving bowl or 2 and garnish with coulis and then rip the mint leaves apart and finish
