Eton Mess - single serve
A delightful mess of meringue, fresh whipped cream & mixed berries
Ingredients
- 1 each Meringue nest large
- 50 ml Whipping Cream
- 50 grams Frozen mixed berries
- 50 grams Fresh berries
- 20 ml berry coulis
- 5 each mint leaves clean and picked
Instructions
- Put frozen berries to one side and defrost. (best started day before and placed in the fridge to defrost)
- Roughly crush meringues by hand and put to one side
- Whip cream to soft peak consistency and place in a large bowl
- Add meringues, frozen berries, fresh berries (trim and cut in half if strawberries) to the cream.
- Using a large catering spoon turn mixture lightly to distribute ingredients, but don't over mix. Less is more
- Turn into a large serving bowl or 2 and garnish with coulis and then rip the mint leaves apart and finish
