Basic White Dough
Ingredients
- 0.675 lt water
- 1 kg beta flour
- 10 grams yeast
- 15 grams sugar
- 20 grams Salt
- 20 grams oil
- .1 tsp citric acid
Instructions
- Put sour dough in oven, heat with steam on 32c for 12 minutes mix all ingredients except flour into the mixing bowl including sour dough
- Add flour and mix on low for 4 minutes no pressure on wheel Mix another 4 minutes on low with pressure on wheel
- Change to high speed and mix another approx 4 mins, adjust wheel tighter Check consistency and add flour if necessary, no more than 750gms
- mix on high for a further 4 mins
