Ingredients
  

  • 0.675 lt water
  • 1 kg beta flour
  • 10 grams yeast
  • 15 grams sugar
  • 20 grams Salt
  • 20 grams oil
  • .1 tsp citric acid

Instructions
 

  • Put sour dough in oven, heat with steam on 32c for 12 minutes mix all ingredients except flour into the mixing bowl including sour dough
  • Add flour and mix on low for 4 minutes no pressure on wheel Mix another 4 minutes on low with pressure on wheel
  • Change to high speed and mix another approx 4 mins, adjust wheel tighter Check consistency and add flour if necessary, no more than 750gms
  • mix on high for a further 4 mins
