Apricot Cheesecake
Designed for a half gastro
Ingredients
Base
- 2 packets biscuits ginger nuts, krispies, digestive, vanilla wine all work well
- 100 grams Butter
Filling
- 1000 grams Cream Cheese
- 350 grams sweetened condensed milk
- 5 TBSP lemon juice
- 1.5 tsp vanilla essence
Topping
- 400 grams dried apricots soaked overnight in boiling water
- 330 ml boiling water to soak apricots
- 4 TBSP sugar
- 1 X lemon juice and zest of
Instructions
Base
- Line a half gastro (full if doubled) with baking paper
- Smash biscuit into a medium crumb. Melt butter and mix thoroughly through biscuits.
- Line the bottom of the gastro with the mixture in an even layer
Filling
- In a stand mixer beatnik softened. the cream cheese u
- Beat in condensed milk a little at a time.
- Beat in the lemon and vanilla
- Add the mixture to the gator in an even layer. Leave in fridge to set
Topping
- Place the apricots and the liquid into a small pot with the lemon (zest only) and sugar.
- Simmer for 10 minutes or until soft and then puree until smooth.
- Add lemon juice to taste (on the tart side of life)
- Cool 90% before applying to the top of the cheese cake and refrigerate before serving.
