Apricot Cheesecake

Ingredients
  

Base

  • 2 packets biscuits ginger nuts, krispies, digestive, vanilla wine all work well
  • 100 grams Butter

Filling

  • 1000 grams Cream Cheese
  • 350 grams sweetened condensed milk
  • 5 TBSP lemon juice
  • 1.5 tsp vanilla essence

Topping

  • 400 grams dried apricots soaked overnight in boiling water
  • 330 ml boiling water to soak apricots
  • 4 TBSP sugar
  • 1 X lemon juice and zest of

Instructions
 

Base

  • Line a half gastro (full if doubled) with baking paper
  • Smash biscuit into a medium crumb. Melt butter and mix thoroughly through biscuits.
  • Line the bottom of the gastro with the mixture in an even layer

Filling

  • In a stand mixer beatnik softened. the cream cheese u
  • Beat in condensed milk a little at a time.
  • Beat in the lemon and vanilla
  • Add the mixture to the gator in an even layer. Leave in fridge to set

Topping

  • Place the apricots and the liquid into a small pot with the lemon (zest only) and sugar.
  • Simmer for 10 minutes or until soft and then puree until smooth.
  • Add lemon juice to taste (on the tart side of life)
  • Cool 90% before applying to the top of the cheese cake and refrigerate before serving.
