Steamed new season potatoes with butter, peas & mint

Ingredients
  

  • 1500 grams New Potatoes
  • 200 grams Frozen peas
  • 50 grams Butter
  • 5 grams Fresh mint leaves

Instructions
 

Prep

  • Wash and cut potatoes to approx 5 cm chunks the vac pac
  • Measure peas and container
  • Cube butter and put into a contain
  • Pick mint and container with a wet paper towel to keep fresh

On Site

  • Stert to cook potatoes in salted boiling water up to 1.5 hours prior to service. Once cooked place into plastic bowl and wrap with cling film to hold heat.
  • 15 mins prior to service bring water to boil and blanch peas. Once cooked add to potato
  • Top with the cut butter and recover till service
  • When served add fresh chiffonade of mint, season with salt and pepper and toss in the bowl to mix elements together. Its ok for the potatoes to break up a bit, not completely smashed through.
