Rye Dough
Ingredients
- 0.65 lt water
- .2 kg beta flour
- .6 kg rye flour
- .2 kg wholemeal flour
- 12 grams yeast
- 16 grams sugar
- 20 grams Salt
- 20 grams oil
- .1 tsp citric acid
Instructions
- mix all ingredients except flour into the mixing bowl
- Add flour and mix on low for 2 minutes
- Change to high speed and mix another approx 8 mins or until elastic
- Turn out into a greased bowl
