Pickled Carrots

We use these in our Banh Mi but good for lots of things.

Servings 300 Banh Mi

Ingredients
  

  • 8 cups sugar
  • 1.75 lt apple cider vinegar
  • 1.5 mls rice wine vinegar
  • 8 Tbs Salt
  • 3 kg Grated Carrots Spun

Instructions
 

  • Whisk all ingress except carrots together. Use stick blender for speed
  • Add grated carrots and put in containers. Will keep for 3 weeks.
