Orzo, roasted squash, green olive & tamarin nut s and seeds
Ingredients
- 5 kg pumpkin cbed to approx 1.5 cm
- 1 kg orzo
- .75 kg green stuffed olives
- .1 kg pumpkin seeds
- .15 kg sunflower seeds
- .1 kg almonds chopped or sliced
- .1 kg walnuts
- 2 Tbsp soya sauce
Instructions
- Cut pumpkin and roast until cooked and golden, reasonably fast oven
- Cook orzo and cool on large flat tray. When cooled slightly dressing with olive oil and butter to prevent sticking and season with salt and pepper
- rough chop walnuts if required, toast with all other seeds and nuts in a pan till golden and cooked. immediately dress with soya sauce and leave to cools on flat tray.
- Package all for transport
