Mayonnaise
Classic French Mayonnaise
Ingredients
- 2 each egg yolks
- 1 each pinch salt and white pepper
- .01 lt tarragon vinegar
- .3 lt oil Olive oil if special
Instructions
- Take ingredients and leave separated in an ambient room to bring up to room temperature.
- Put all ingredients except oil into a bowl and whisk together until smooth.
- Start whisking in the oil a drop at a time, once combining and volume growing, increase the drops to a trickle etc.
- The object is to emulsify the mayo
- The more you whisk, the whiter it becomes.
