Classic French Mayonnaise

Ingredients
  

  • 2 each egg yolks
  • 1 each pinch salt and white pepper
  • .01 lt tarragon vinegar
  • .3 lt oil Olive oil if special

Instructions
 

  • Take ingredients and leave separated in an ambient room to bring up to room temperature.
  • Put all ingredients except oil into a bowl and whisk together until smooth.
  • Start whisking in the oil a drop at a time, once combining and volume growing, increase the drops to a trickle etc.
  • The object is to emulsify the mayo
  • The more you whisk, the whiter it becomes.
