Kate's Cottage Pie
Ingredients
- 700 Grams Beef mince
- 2 Medium onions Grated
- 2 Carrots Grated
- 3 Cloves garlic Finely chopped
- 3 Tablespoons Tomato paste
- 1/2 Teaspoon Dried thyme
- 2 Tablespoons Flour
- 1/2 Cup white wine
- 2 Beef oxo cubes
- 1 Cup water
- 6 potatoes
- 2 Tablespoons Butter
- 1/4 Cup milk
- 1/2 Cup Parmesan Grated
- 2 Tablespoons Worcester sauce
Instructions
- Peel and boil potatoes ready for mashing.
- Brown beef well in a couple of tablespoons of oil on a high heat.
- Turn heat down, add carrot, onion, garlic and thyme to pan, season with salt and pepper and cook off.
- Add tomato paste and cook off for 10 minutes. Sprinkle flour over and mix in well, then add wine and Worcester sauce and reduce slightly.
- Add oxo cubes and water. Cover and simmer for half an hour.
- Meanwhile, drain and mash potatoes with butter, milk and half the Parmesan.
- Check meat mixture for seasoning, then assemble pie and sprinkle the top with the remaining 1/2 of the Parmesan.
- Bake for 1/2 an hour at 180 c or until the top is golden brown.
