  • 24 grams Dried basil weight X 3 if fresh
  • 500 ml Chimi Sauce (see recipe)

Roast Pork

  • 10 kg Pork Loin
  • 750 grams Apple sauce

Pork Marinade

  • 2.78 tsp Dried chilli
  • 30 grams Crushed garlic
  • 30 grams crushed ginger
  • 50 grams salt
  • 10 grams NY pepper
  • 35 grams Soft brown sugar
  • 55 grams oil
  • 150 grams Apple cider vinegar

For cooking

  • 2.75 cups water Add to roasting pans after meat has been marinated

Steamed Agria potatoes with lashings of butter, peas & parsley

  • 9 kg Washed Agria
  • 1 kg butter cubed
  • 2 kg Garden peas
  • 1 Parsly large bunch

Roasted carrots & a buttery orange sauce

  • 5 kg prepped side cut carrots
  • 1 lt orange juice
  • 250 grams butter

Roasted baby beans with butter & garlic

  • 5 kg Prepped baby beans
  • 4 Tbs Crushed garlic
  • 500 grams butter

Hood St Slaw – Pickled carrots, creamy mayo & grated tasty cheese

  • .9 kg Red Cabbage shredded
  • 1.8 kg Green cabbage shredded
  • 1 kg frozen mango
  • 800 grams pickled carrot
  • 3 Silver beet
  • 500 grams Tasty cheese grated
  • 750 grams Dijonnaise

Pesto, tomato, baby spinach & pea pasta salad

  • 10 tomatoes
  • 1 kg Dry spiral pasta good quality
  • 350 grams pesto
  • 500 grams Baby spinach
  • 1 kg Garden peas
  • 500 grams Dijonnaise

Eton Brownie Mess

  • 60 Meringue nests
  • 2 lt Cream
  • 1 kg Raspberries Frozen
  • 1 kg Blueberries Frozen
  • 3 punnets strawberries
  • 1 Goofy Gluten Free Brownie
