Chicken skewers with lime, ginger & coriander

Ingredients
  

Skewers

  • 2 kg chicken tenders cut length-ways into 2 long strips
  • 80 each 6 inch bamboo skewers

Marinade

  • .25 lt lime juice
  • 1 Tbsp minced ginger
  • .15 lt fish sauce
  • .1 lt plum sauce
  • .025 kg coriander finely chopped

Instructions
 

  • Whisk together all marinade ingredients and reserve 25% for dressing the skewers once cooked.
  • Add cut chicken to it and marinate for approx 2 hours
  • Place chicken on bamboo skewer length-ways on the end
  • Container ready for cooking
  • Cook on a clean bbq in batches, cleaqning between batches
