BBQ  mussels wrapped in streaky bacon with horopito mustard mayo

Ingredients
  

Mussels

  • 1 kg streaky bacon
  • 1 kg green lipped mussels de-bearded and cut in half

Sauce

  • 200 grams European style mayo (hellmans or similar)
  • 20 grams green peppercorns
  • 20 grams seeded mustard
  • 20 grams lemon juice

Instructions
 

  • Wrap the cut mussels in bacon ensuring that the ends cross over by at least half. The aim is to get 3-4 wrapped out of 1 piece of bacon. Stick with a toothpick ready for bbq'ing
  • Puree the peppercorns, mustard and lemon in the whizzer, add the mayo and container
  • Cook the mussels on the BBQ until golden. Serve the sauce as a dipping sauce.
