BBQ mussels wrapped in streaky bacon with horopito mustard mayo
Ingredients
Mussels
- 1 kg streaky bacon
- 1 kg green lipped mussels de-bearded and cut in half
Sauce
- 200 grams European style mayo (hellmans or similar)
- 20 grams green peppercorns
- 20 grams seeded mustard
- 20 grams lemon juice
Instructions
- Wrap the cut mussels in bacon ensuring that the ends cross over by at least half. The aim is to get 3-4 wrapped out of 1 piece of bacon. Stick with a toothpick ready for bbq'ing
- Puree the peppercorns, mustard and lemon in the whizzer, add the mayo and container
- Cook the mussels on the BBQ until golden. Serve the sauce as a dipping sauce.
