Agria & Pea Smash (DAIRY FREE)

Ingredients
  

  • 1 kg Agria potatoes
  • .2 kg Peas
  • .075 kg Dijonaise https://thatfoodguynzrecipes.com/whole-egg-dijonnaise/
  • 10 grams salt
  • 5 grams NY pepper

Instructions
 

  • Chop potatoes into chunks and lay up in steamer baskets
  • Lay peas up in steamer baskets
  • Cook potatoes on full steam 100C for 27 mins
  • When timer goes add peas on top shelf and cook a further 3 minutes
  • Open oven and let steam subside drying out potato
  • Put into large bowl and smash together with peas & S&P
  • Let cool to warm & mix through dijonnaise
  • Form into 135 gram potato cakes
