Mussels Fritters with a sage and garlic topping

Ingredients
  

Fritters

  • 1 kg mussels meat seconds if available
  • 5 each eggs
  • 5 Tbsp Gluten free baking mix
  • 1 each pinch of salt, pepper & curry powder

Topping

  • 1 tsp minced garlic
  • .5 cups mayonaise hellmans or similar
  • 6 each sage leaves large destalk and finely chop

Instructions
 

At kitchen

  • de-beard and de-tounge the mussels, then finely chop
  • Add eggs and gf mix then label and pack in fridge
  • Mix all ingredients for topping together and put into a piping bag. label/pack

On site

  • Cook small fritter around the size of a $2 coin. Make this by piling on top and cook till golden on both sides.
  • Serve with a small dob of topping as garnish
